If you happen to have an over-stocked medley of hard vegetables like carrots, sweet potatoes, bell-peppers, zucchinis and even broccoli or cauliflower florets, this is a recipe you will have to try. It is so easy to make and colourful enough to entice your child definitely. Also, it has taste to boot as well! Win-win?
What you need to do:
1. cut up the veges any way you like, lengthwise or round and place them on the roasting pan. i added in chopped onions and crushed garlic for flavour.
2. coat them with a generous amount of olive oil, sea salt and coarse black pepper to taste. i added sprigs of fresh thyme and rosemary for their delicious aroma.
3. heat oven to 180 degree celcius for 10 minutes before putting the pan in. roast for 40 minutes, tossing the vegetables at half mark. cook till tender inside and crisp outside.
4. Eat like you never have before :)
